Chocolate Avocado Mousse

How is everyone doing after the epic eclipse day? Nashville was in the path of totality and I thought the entire event was just magical. Time stood still for a couple of minutes and I’m so grateful for this experience. It kind of makes you realize how small we are in the big scheme of things.

Last week, I made this chocolate avocado mousse with a crunchy coconut topping and base. It was the perfect snack after work. Cold, creamy, easy to make, good for you, and tasty.

The base ingredient for this recipe is : avocado. Avocados are packed with nutrients such as vitamins, healthy fats, and fiber.

This recipe is light and rich at the same time and only requires a few ingredients. It makes a yummy snack or dessert.

Chocolate Avocado Mousse


Crunchy Coconut Base and Topping

1/3 cup shredded unsweetened coconut

1/4 cup cocoa powder

1/4 cup some honey , agave, or maple syrup


Avocado Mousse

2 avocados

2 frozen bananas

1/2 tsp vanilla

1/2 cup honey

1/4  cup melted coconut oil


Chocolate Avocado Mousse

1/4 cup cocoa powder



Combine coconut base and topping ingredients and fill base of jars.

Mix ingredients for avocado mousse. I used my blender.

Top base with half of mousse.

Add cocoa powder to remaining mousse. Blend and add to jars.

Top mousse with remaining coconut topping.

Leave in fridge for at least one hour. Overnight is best.

Milka OREO

The Milka chocolate was tantalizingly on display at the store. Stacks and bins (sometimes pallets) of it heaped up for all to drool over…every variety and flavor combination you can think of.

Living in Germany, many years ago, prepared me for the onslaught of chocolate bars displayed in the supermarket. Milka is the most popular chocolate in Germany. Everyone knows the purple cow on the Milka packaging.

I absolutely love Milka chocolate. It’s the first chocolate I ever tasted. Milka is heavenly.  It’s like symphony to my taste buds, so sweet and so fulfilling. During the cold German winters, my mom and I often drank Jasmine tea and ate our favorite Milka bars. We knitted sweaters, talked and snacked. That was before the internet and texting. At 18, I moved to the U.S. For years my mom would send over packages full of Milka bars. Getting that package felt like Christmas every single time. I remember I would carefully save the Milka chocolate bars for a long time, because I did not want the amazing experience of eating the bars come to an end.Milka OREO

Last week, I had my first bite of the new Milka OREO bar. It’s so delicious. Seriously, you need to try this combo. The rich, creamy, smooth taste brought back memories of my time in Germany. While eating the Milka Oreo Chocolate Candy Bar, I started looking for old photographs. I found photos of my mom, grandma, sister, and other relatives. To this day I can’t figure it out how my sister always knew where our mom kept the Milka stash. milkaMilka

The OREO and Milka chocolate compliment each other well. OREO cookie pieces mixed in rich vanilla creme and coated in Milka. Amazing and delicious!

Vegan Chocolate Cupcakes

If I’m out of eggs and butter, or if I just feel like cutting out fat and cholesterol from my diet (which actually happens a lot), I bake using vegan recipes. Last night I was in the mood for some chocolate so I prepared these vegan chocolate cupcakes. They were delicious. I didn’t miss the eggs and butter at all. Here is the recipe.

1 c whole wheat flour
1/3 c cocoa powder
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
1 c sugar
1 c almond milk
1 tsp apple cider vinegar
1/3 c canola oil
1 tsp almond extract

Preheat oven to 350 degrees and line your muffin pan with liners.
In a large bowl combine flour, cocoa powder, baking soda, baking powder, and salt.
Add the vinegar to the almond milk and stir briskly. Put it aside for a few minutes until it curdles.
In the meantime whisk together sugar, oil and almond extract, and then mix them in with the milk and vinegar.
Add wet ingredients to the dry, and beat until the mixture is smooth.
Pour it into the liners until each is about ¾ full.
Bake for 20-24 minutes.
