Kale & Mango Smoothie

If you follow me on Instagram, you might have noticed that lately, I’ve been eating a lot of mango and kale. Both are so affordable, healthy and delicious. Most days, Aldi has mangoes for $ 0.69 a piece. I usually stock up on mangoes and freeze a bunch. I always like to have some fruit in the freezer. We are smoothie junkies over here – we make smoothies almost daily.

Mangoes help lower blood pressure and boost brain health. The list of health benefits of kale goes on and on. Kale fights cancer, relieves pain, improves heart health, etc. It”s a true super food.

Even if you don’t like kale, I am positive you’ll enjoy this kale and mango smoothie. This smoothie is refreshing and healthy, and offers relief from the summer heat. It’s been so hot in Nashville, which makes mowing and any outdoor work very hard. After mowing, I enjoy this smoothie so much. I cannot tell you how good it feels. It’s also a great way to get in some extra greens.

Kale & Mango Smoothie

To start the smoothie, you are going to need:

1 cup frozen mango

Pan-Fried Kale and Butter Beans

Kale and butter beans

So, I almost didn’t post this recipe because it seemed too simple and easy to prepare. However, since this dish is super nourishing, ¬†delicious and inexpensive, ¬†and it only requires a few simple ingredients, I thought I needed to share.

kale and butter beans

On Saturday, my fridge and pantry were pretty much empty. I did find a can of butter beans and a bag of kale. Perfect ingredients for a quick and warm lunch.

This is my favorite kind of lunch. Everything gets thrown into a pan, and the dish is ready in minutes.

kale and beans

Ingredients:

(serves two)

1 cup kale (I get mine in a bag, washed and chopped)

1 can butter beans (rinsed and drained). Mine were baby butter beans, but I love the large butter beans.

3 tbsp olive oil

1 clove of garlic

1 tbsp soy sauce

Salt and pepper

kale and beans

Directions:

In a large pan, heat olive oil over medium heat. Add the beans and cook until lightly browned, about 5 minutes. Flip the beans and cook for an additional 5 minutes. Stir in garlic, kale, salt and pepper to taste. Continue to cook until the kale begins to wilt. Mix in the soy sauce and cook for 1 minute longer, stirring until everything is evenly coated.
