3 Easy Plant-Based Meals

Although I’m neither vegan nor vegetarian, I like to incorporate several plant-based meals to my weekly dinner menu. I enjoy eating bowls full of colorful veggies, hearty soups, and veggie stir fries. Occasionally, I do eat poultry but rarely meat. I simply don’t eat it because I don’t crave it.

If you’d like to incorporate more plant-based meals to your dinner menu, here are three easy, affordable and delicious recipes your whole family will enjoy.

Oven Roasted Vegetables

I make several sheets at once. I’m a big fan of veggie bowls. They are so tasty and the colors make me happy. Leftovers are perfect for my work lunches.

Directions:
Preheat the oven to 400 degrees.
Cut the vegetables and place them in a single layer on a baking sheet.
Drizzle with olive oil, salt and pepper.
Bake for 15 to 20 minutes, until vegetables are tender.

Zucchini Mushroom Burger

This plant-based burger is bursting with flavor. So much goodness in one little patty.

Hearty Lentil Soup

This was my childhood favorite soup. It’s thick and hearty and so comforting. Plant-based doesn’t mean it has to be boring and tasteless.
