Although I’m neither vegan nor vegetarian, I like to incorporate several plant-based meals to my weekly dinner menu. I enjoy eating bowls full of colorful veggies, hearty soups, and veggie stir fries. Occasionally, I do eat poultry but rarely meat. I simply don’t eat it because I don’t crave it.

Oven Roasted Vegetables
I make several sheets at once. I’m a big fan of veggie bowls. They are so tasty and the colors make me happy. Leftovers are perfect for my work lunches.
Directions: Preheat the oven to 400 degrees. Cut the vegetables and place them in a single layer on a baking sheet. Drizzle with olive oil, salt and pepper. Bake for 15 to 20 minutes, until vegetables are tender.
