Many years ago, I came across a Pudding Cookie recipe which totally revolutionized the way we bake cookies in our home. No other cookie recipe compares to this one. We had no idea that a box of chocolate pudding added to the recipe would create the most gooey cookies with a brownie-like center that just melts in your mouth.
This is the recipe my kids want when life isn’t fair and kind. No matter how bad things get, these cookies make them smile again. Of course, they have no problem eating them when the world is perfect and the sun shines on them. Trust me, these cookies are delicious, and after you try them, you will make sure to ALWAYS have a box of pudding in your cupboard.
Chocolate Pudding Cookies
2/3 cup butter
½ cup oil
1 cup sugar
1 cup brown sugar (the recipe calls for 2 cups of sugar, but I cut mine to 1.5 cups since the pudding adds extra sugar)
1 small package instant chocolate pudding
2 eggs
3 tbsp water
3 cups flour
1 tsp baking soda
1 tsp salt
1 ½ cups chocolate chips
Beat butter, oil, and sugars until creamy. Add pudding mix, eggs, and water and mix well. In a separate bowl, combine flour, baking soda, and salt, then gradually add to creamy chocolate mixture. Stir in chocolate chips.
Place tablespoon sized scoops of mixture on ungreased cookie sheet. There needs to be at least 1.5 inch space between each cookie on the sheet. Bake at 350 degrees F for 9 to 11 minutes.
