Energy Balls

Energy BallsEnergy Balls If you’re  looking for a cost-effective snack (we all know how expensive Larabars are) try these no bake energy balls. They are delicious and so easy to make.  I love to eat them after I mow the lawn or exercise. Simple energy balls like these are my favorite. I keep them in the fridge so they stay nice and cold and last for about a week. Energy Balls The internet is full of Energy Balls recipes and this is the one I really like. I tweaked it slightly by adding coconut oil and cutting the amount of honey and chocolate chips. I found the original recipe too sweet for my taste.

No Bake Energy Balls

Ingredients:

I cup rolled oats

1/2 cup flax seeds

1/4 cup chocolate chips

1/2 cup peanut butter

1 tsp coconut oil

1/4 cup honey

1 tsp vanilla

Shredded coconut and chopped nuts (optional)

Directions:

I usually take about a tablespoon of the mixture and roll it into a ball using my hands. If it’s too sticky you may need to wet your hands with a little water first. Roll the balls in coconut or chopped nuts (optional). Refrigerate for at least 30 minutes.Energy Balls
