Ham & Egg Spaghetti (or what to do with leftover Christmas ham)

On Christmas Day, the kids and I were feasting on a typical ham- mashed potatoes- stuffing dinner. After filling our bellies until we were practically in a coma, we swore we would never eat again. An hour later, we were already munching on some leftover Tiramisu and eggnog. It’s hopeless, we just love food too much.

Even though we ate until we could eat no more, we still had some leftover ham in the fridge today. Here’s what I did with it.

This is my favorite recipe for leftover ham – Ham & Egg Spaghetti. I have been eating this dish since I was a toddler. It’s simple, yet very delicious. Enjoy it for breakfast, lunch, or dinner.

Ingredients:

Spaghetti
Eggs
Ham
Butter or Oil
Salt & Pepper

Directions:

1. Cook spaghetti.

2. Melt butter in skillet; add ham.

3. Drain spaghetti; add to ham.

4. Add the beaten eggs.
