On Sunday afternoon, Nashville was on tornado watch. The skies were dark and gloomy, with temperatures reaching 68 degrees. We were advised to seek cover when I was in the middle of baking a yogurt cake. Luckily, it all ended well. The tornado was nowhere in sight and the yogurt cake turned out great.
The kids and I enjoyed the fluffy, moist, not too sweet, and perfect- for-any-time- of-the-day cake. The yogurt cake also brought back childhood memories. My grandmother used to make this cake when I was a little girl and I have always loved it, mainly because of its simplicity. I wish I had her recipe, but then again, she always created the most glorious dishes without using a single recipe. My daughter asked me to add chocolate chips to the batter but I wanted the most innocent version of this cake. I also skipped the almond extract in the recipe.
