Snow in Nashville & Vegan Pumpkin Bread

Well, it doesn’t happen very often, but it snowed enough today in Nashville to cover the ground with a blanket of white snow. My kids were born and raised in Los Angeles, so this was a very special treat for them.


The Thanksgiving holidays are upon us, with some of us already cooking and getting things ready for the big feast, so the snow makes it only seem more like holiday time.

Blame it on the cold weather, but I baked two loaves of vegan pumpkin bread while the kids enjoyed the snow.

This is my all-time favorite pumpkin bread recipe. It’s vegan, not too sweet, bursts with flavor, and makes two loaves.
