Strawberry Cheesecake Smoothie

While most people I know wrinkle their nose at the word ‘cottage cheese’, my family actually likes it. I guess it’s one of those love or hate things. My daughter Christy absolutely loves cottage cheese. She eats it every day for breakfast with fruit and as a snack with granola and cinnamon. I use cottage cheese in lasagna and crepe fillings – it’s cheaper and higher in protein than ricotta cheese.

So, why not use cottage cheese in smoothies. You don’t need to buy expensive protein powders when you can get as much or more protein from food. Most people hate the cottage cheese texture, but once it’s blended, it’s very creamy.

For this smoothie I used low-fat cottage cheese, but I also added two tablespoons of low-fat cream cheese to get the desired cheesecake flavor. Enjoy!

The white polka dots are marshmallow slices stuck to the glass. I thought they added cuteness to the  plain glass.

Strawberry Cheesecake Smoothie

Ingredients:

1 cup of milk (any)

1/3 cup low fat cottage cheese

2 tbsp low fat cream cheese

1 cup frozen strawberries

3-4 vanilla wafers

Honey to sweeten

 

Combine everything in a blender.
